Roast carrot and ginger soup
Carrots roasted until sweet, then blended smooth with ginger and a little potato.
50 minutes, serves 3. About 314 g a serving, with 6 g of fat and 8 g of fibre in it.

Ingredients
- 600 g carrots, cut into chunks
- 300 g potatoes, peeled and cubed
- 20 g fresh ginger, grated
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp ground turmeric
Method
- Heat the oven to 200C fan. Toss the carrots and potatoes with the oil and turmeric and spread them on a tray.
- Roast for 30 minutes, turning once, until the edges are caramelised and a knife goes through easily.
- Tip everything into a pan with the ginger and 900 ml of water and bring to a simmer.
- Blend until completely smooth, season with the salt, and add a splash more water if it is thicker than you want.
