Banana and cinnamon buckwheat pancakes

Ingredients
- 50 g buckwheat flour
- 1 tsp baking powder
- ½ tsp ground cinnamon
- 1 banana, mashed
- 1 egg
- 100 ml rice milk
- 1 tsp rapeseed oil
- 1 tbsp maple syrup

Method
- Stir the flour, baking powder and cinnamon together in a bowl.
- In a second bowl, beat the mashed banana, egg and rice milk together, then stir it into the dry ingredients to make a thick batter. Do not overmix.
- Brush a non stick pan with the oil and set it over a medium heat.
- Drop in tablespoons of batter, three or four at a time, and cook for 2 minutes until bubbles show on top. Flip and cook for 1 minute more.
- Keep the first batch warm under a tea towel while you cook the rest, then serve with the maple syrup poured over.
