Chicken and rice soup
A clear, gentle soup of poached chicken, carrot and rice, finished with parsley.

Ingredients
- 220 g chicken breast, whole
- 90 g white rice
- 1 carrot, diced small
- 2 tsp rapeseed oil
- 10 g fresh ginger, sliced
- 1 tsp salt
- 2 tbsp flat leaf parsley, chopped
Method
- Warm the oil in a saucepan, add the carrot and ginger and cook gently for 4 minutes without colouring.
- Pour in 1.2 litres of water, add the whole chicken breast and bring to a bare simmer.
- Poach for 15 minutes, then lift the chicken out and shred it with two forks.
- Add the rice to the pan and simmer for 12 minutes, until tender.
- Return the chicken, season with the salt, and serve with the parsley on top.
