Courgette and herb omelette
A soft omelette folded around courgette cooked down with chives and parsley.

Ingredients
- 2 eggs, beaten
- 1 courgette, coarsely grated
- 1 tsp rapeseed oil
- 2 tbsp chives, snipped
- 1 tbsp flat leaf parsley, chopped
- ½ tsp salt
- ¼ tsp black pepper
Method
- Squeeze the grated courgette in a clean cloth to get the water out of it.
- Warm the oil in a non stick pan and cook the courgette over a medium heat for 5 minutes, until soft and dry.
- Season the beaten eggs and pour them over the courgette, tilting the pan so they run to the edges.
- Cook for 3 minutes without stirring, until only the top is still loose, then scatter the herbs over and fold it in half.
