Cucumber and turkey rice bowl
Cold rice with sliced turkey, crisp cucumber and a splash of rice vinegar.

Ingredients
- 220 g turkey breast, cooked and sliced
- 150 g white rice
- 200 g cucumber, halved and sliced
- 2 tsp rapeseed oil
- 2 tsp rice vinegar
- 2 tbsp chives, snipped
- 1 tsp salt

Method
- Cook the rice in salted water until tender, about 12 minutes, then drain and spread it out to cool.
- Whisk the oil, vinegar and salt together in the bottom of a bowl.
- Add the cooled rice and turn it through the dressing.
- Fold in the cucumber and turkey, and scatter the chives over.
