Gentle rice congee
Rice simmered slowly with ginger until it collapses into a soft, savoury porridge.

Ingredients
- 120 g white rice
- 200 g chicken breast, whole
- 15 g fresh ginger, sliced thinly
- 2 tsp sesame oil
- 1 tsp salt
- 2 tbsp chives, snipped
Method
- Rinse the rice until the water runs clear, then put it in a large pan with the ginger and 1.5 litres of water.
- Bring to the boil, turn the heat right down and simmer uncovered for 35 minutes, stirring now and then, until the grains have broken down.
- Lay the chicken breast on top, cover, and cook for 12 minutes more.
- Lift out the chicken, shred it, and stir it back through with the salt. Loosen with a little hot water if it has gone too thick.
- Serve with the sesame oil and chives spooned over.
