Ginger beef with rice and carrots

Ingredients
- 200 g lean beef mince, 5% fat
- 150 g white rice
- 1 carrot, cut into thin batons
- 1 courgette, halved and sliced
- 12 g fresh ginger, grated
- 1 tsp rapeseed oil
- 1 tbsp tamari
- 2 tbsp chives, snipped
Brands differ. Scan the one in your cupboard to check what it actually contains. That matters most for the tamari here, where what is in the packet varies by brand.
Method
- Cook the rice in plenty of salted water until tender, about 12 minutes, then drain.
- Heat the oil in a wide pan over a high heat and brown the mince for 5 minutes, breaking it up with a spoon.
- Add the carrot and cook for 3 minutes, then the courgette and ginger for 3 minutes more, until the vegetables are just soft.
- Pour in the tamari with 3 tablespoons of water and let it bubble for a minute, coating everything.
- Spoon over the rice and scatter with the chives.
