Ginger chicken rice bowl

Ingredients
- 2 chicken breasts, sliced
- 150 g white rice
- 1 carrot, cut into thin batons
- 1 courgette, halved and sliced
- 1 tsp rapeseed oil
- 15 g fresh ginger, grated
- 1 tsp salt
- 2 tbsp chives, snipped
Method
- Rinse the rice, then cook it in plenty of salted water until tender, about 12 minutes. Drain.
- While it cooks, heat the oil in a wide pan over a medium heat.
- Add the carrot and cook for 3 minutes, then the courgette for 3 minutes more, until both are just soft.
- Push the vegetables to one side, add the chicken and ginger, and cook for 6 to 8 minutes until the chicken is white all the way through.
- Season with the salt, fold everything together, and pile onto the rice with the chives scattered over.
