Haddock with carrot and potato mash
Baked white fish on a soft mash of potato and carrot with parsley.

Ingredients
- 2 haddock fillets
- 220 g potatoes, peeled and cubed
- 80 g carrot, peeled and cubed
- 2 tsp olive oil
- 2 tbsp flat leaf parsley, chopped
- 1 tsp salt
Method
- Heat the oven to 190C fan.
- Boil the potato and carrot together in salted water for 18 minutes, until both are completely soft. Drain well.
- Put the haddock on a lined tray, season, and bake for 12 minutes until it flakes.
- Mash the potato and carrot smooth with the olive oil, then stir in the parsley and season.
- Serve the fish on the mash.
