Lemongrass chicken with rice noodles

Ingredients
- 2 chicken breasts, sliced thinly
- 120 g rice noodles
- 150 g cucumber, cut into batons
- 1 carrot, cut into matchsticks
- 1 lemongrass stalk, outer layer removed, finely chopped
- 10 g fresh ginger, grated
- 1 tsp rapeseed oil
- 1 tbsp tamari
- 2 tbsp coriander leaves, roughly chopped
- ½ tsp salt
Brands differ. Scan the one in your cupboard to check what it actually contains. That matters most for the tamari here, where what is in the packet varies by brand.
Method
- Mix the chicken with the lemongrass, ginger, tamari and salt and leave it for 10 minutes while you prepare the vegetables.
- Soak the rice noodles in just-boiled water for 4 minutes, or as the packet says, then drain and rinse under cold water.
- Heat the oil in a wide pan over a high heat and cook the chicken for 5 to 6 minutes, turning once, until golden and cooked through.
- Divide the noodles between two bowls, top with the cucumber and carrot, then the chicken and any juices from the pan.
- Finish with the coriander.
