Melon, kiwi and strawberry fruit salad
Cantaloupe, kiwi and strawberries in a little maple syrup with a hint of fresh ginger.

Ingredients
- 250 g cantaloupe melon, peeled and cubed
- 2 kiwi fruits, peeled and sliced
- 120 g strawberries, hulled and halved
- 2 tsp maple syrup
- 5 g fresh ginger, finely grated

Method
- Squeeze the grated ginger in your fingers over a small bowl to catch the juice, and discard the fibres.
- Stir the maple syrup into the ginger juice.
- Put the melon, kiwi and strawberries in a serving bowl, pour the syrup over and turn gently to coat.
- Leave for 5 minutes for the flavours to settle, then serve.
