Pork loin with rosemary potatoes and green beans

Ingredients
- 2 pork loin steaks, fat trimmed off
- 260 g potatoes, cut into chunks
- 100 g green beans, trimmed
- 1½ tsp olive oil
- 1 tsp rosemary, finely chopped
- 1 tsp salt
Method
- Heat the oven to 200C fan. Boil the potatoes for 8 minutes, drain, and shake them in the pan to rough up the edges.
- Toss the potatoes with two thirds of the oil, the rosemary and half the salt, spread on a tray and roast for 25 minutes, turning once, until golden.
- Ten minutes before the potatoes are done, season the pork and cook it in the remaining oil in a hot pan for 4 minutes a side, until no longer pink in the middle. Rest it on a warm plate for 5 minutes.
- Boil the green beans for 4 minutes while the pork rests, and drain.
- Slice the pork and serve with the potatoes, beans and any resting juices.
