Prawn and ginger fried rice

Ingredients
- 150 g white rice
- 200 g raw peeled prawns
- 1 carrot, diced small
- 1 courgette, diced small
- 15 g fresh ginger, grated
- 2 tsp rapeseed oil
- 1 tbsp tamari
- 2 tbsp chives, snipped
Brands differ. Scan the one in your cupboard to check what it actually contains. That matters most for the tamari here, where what is in the packet varies by brand.
Method
- Cook the rice in plenty of water until just tender, about 11 minutes. Drain and spread it on a tray to steam dry, which stops it clumping in the pan.
- Heat the oil in a wide pan or wok over a high heat. Add the carrot and cook for 3 minutes, then the courgette for 2 minutes more.
- Add the prawns and ginger and stir for 2 to 3 minutes, until the prawns turn pink all the way through.
- Tip in the rice, pour over the tamari and toss everything for 2 minutes until the rice is hot.
- Serve with the chives scattered over.
