Spinach omelette with cheddar
A light omelette of one egg and extra whites, folded over wilted spinach and a little cheddar.
15 minutes, serves 2. About 156 g a serving, with 8 g of fat and 1 g of fibre in it.

Ingredients
- 1 egg
- 4 egg whites
- 100 g spinach, washed
- 15 g mature cheddar, grated
- 1 tsp rapeseed oil
- 1 tbsp chives, snipped
- ½ tsp salt
Method
- Put the spinach in a non stick pan over a medium heat with a splash of water and stir until it wilts, about 2 minutes. Tip it into a sieve and press out the water.
- Beat the egg, egg whites and salt together.
- Wipe the pan, add the oil and return it to a medium heat. Pour in the eggs and tilt the pan so they cover the base.
- Cook for 3 minutes without stirring, until only the top is still loose, then scatter over the spinach, cheddar and chives.
- Fold the omelette in half, slide it onto a board, and cut it in two.
