Tuna, potato and green bean salad
Warm new potatoes and green beans tossed with tinned tuna, olive oil and soft herbs.

Ingredients
- 260 g new potatoes, halved
- 100 g green beans, trimmed
- 160 g tinned tuna in spring water, drained
- 1 tbsp olive oil
- 2 tbsp flat leaf parsley, chopped
- 1 tbsp dill, chopped
- 1 tbsp chives, snipped
- 1 tsp salt
Brands differ. Scan the one in your cupboard to check what it actually contains. That matters most for the tinned tuna in spring water here, where what is in the packet varies by brand.
Method
- Boil the potatoes in salted water for 12 minutes, then drop in the green beans and cook for 4 minutes more, until both are tender.
- Drain well and leave in the colander for a couple of minutes to steam dry.
- Tip the warm potatoes and beans into a bowl with the olive oil and salt and turn them over gently so they take up the oil.
- Flake in the tuna, add the herbs, and fold together. Good warm, and good cold from the fridge the next day.
