Turkey and rice noodle soup
A clear ginger broth with poached turkey, carrot and rice noodles.

Ingredients
- 220 g turkey breast, whole
- 120 g rice noodles
- 1 carrot, sliced thinly
- 12 g fresh ginger, sliced
- 2 tsp rapeseed oil
- 1 tsp salt
- 2 tbsp flat leaf parsley, chopped
Method
- Warm the oil in a saucepan and cook the carrot and ginger gently for 4 minutes.
- Add 1.2 litres of water and the turkey breast, bring to a bare simmer and poach for 15 minutes.
- Lift out the turkey and slice it. Season the broth with the salt.
- Soak the rice noodles in just-boiled water for 4 minutes, or as the packet says, then drain.
- Divide the noodles between two bowls, lay the turkey on top and ladle over the broth. Finish with the parsley.
